Sorry I could make tonight's workout, my foot needs a day or so to heal from this weekend. I decided to cook a lot this evening, so here is my breakfast casserole recipe:
1 lb. spicy sausage
1 lb. frozen chopped spinach
8 oz. sliced mushrooms
12 eggs
1/2 cup cream, whole milk or half and half (whatever you have)
1/2 red onion, diced
Cheese to top with
salt and pepper to taste
Preheat oven to 375
Cook the sausage until nicely browned. Add the onion and mushrooms and cook until the onion is translucent (about 5 minutes). Drain the spinach and squeeze as much water out as possible. Typically this involves fist-fulls of spinach squeezed through paper towels. Mix all ingredients (except cheese) in a large bowl and set aside. Liberally butter a casserole dish and pour in egg mixture. Bake until a knife can be inserted in the middle and comes out clean (around 20-30 minutes depending in the pan you use. Spread shredded cheese on top and allow to melt or broil it.

If you are anything like me, about two days! I have to ration myself this time and try and only eat it for breakfast. I have already "tasted" a healthy sized slice and it was heaven...it's going to be hard to resist this one sitting in the fridge!
The mystery bar has been weighed, and ... ... it is a 33# bar! So now we officially have three 33# barbells.
